pancake goodness

Saturday morning cartoon time is a bit of a lazy favourite of ours, when we’re all together. Nikleodeon silliness was part of the menu this morning.

And to wash it down: here’s our favourite pancake recipe! Jamie Oliver style. Though don’t try and substitute the flour for healthier flour, when your white flour supplies are low. We proved it doesn’t work!

Here’s the ingredients for four small portions (double or triple!)
3 large free-range eggs
115 g plain flour
1 heaped teaspoon baking powder
140 ml milk
1 pinch salt

Separate the eggs, putting the whites into one bowl and the yolks into another. Add the flour, baking powder and milk to the yolks and mix to a smooth thick batter. Whisk the whites with the salt until they form white mystical fluffiness. Fold into the batter – it’s now ready to go.

Heat a decent pan on a high heat. Pour some of your batter into the pan and fry for a couple of minutes until it starts to look golden and firm. Flip and complete to your personal preference!

You can make these pancakes large or small, to your liking. Serve them simply doused in maple syrup, honey, jam, lemon or butter.
